Method

Heat the oven to 425°F. Toss the potatoes with oil and salt and roast until crisp.

Meanwhile, brown the Impossible Beef in a large pan with the onion and pepper, breaking it up as it cooks.

Add the spices and vinegar and cook a minute. Stir in the beans and potatoes.

Let the filling cool for 10 minutes. Hot filling steams the tortillas and makes them soggy in the freezer.

Spoon filling and a little salsa onto each tortilla, fold in the sides and roll tight. Wrap each in foil or parchment.
Fridge 4 days, freezer 3 months. From frozen, remove the foil, wrap in a damp paper towel and microwave 2 to 3 minutes, flipping halfway. Crisp in a dry pan if you have 2 more minutes.
- Using TVP? Rehydrate it in broth with the spices. TVP holds up in the freezer even better than the brand mince does.
For little ones
Make a few with less spice. Wrap in foil for a school-morning grab.
