

Crispy Black Bean Quesadillas
Seasoned plant-based beef and smashed black beans, folded into tortillas and griddled until they shatter. Every kid and every grown-up in the house will fight over the last wedge, so make all four.

Method

Brown the Beyond Beef and onion in a large skillet over medium-high, breaking it up as it cooks.

Add the black beans and spices, then mash about half the beans right in the pan so the filling holds together.

Spread the filling over half of each tortilla, add the cheese and fold. Wipe out the skillet.

Cook the quesadillas two at a time over medium until deep golden on both sides.

Rest a minute, cut into wedges and serve with salsa.
Filling keeps 4 days. Reheat assembled quesadillas in a dry pan, never the microwave.
- Using lentils instead? Mash them with the beans and add a tablespoon of salsa to the filling so it stays moist.
For little ones
Quesadilla triangles with a dip. Use less chili in their half.
