Brown the Impossible Beef in the oil over medium-high with the taco seasoning, breaking it up as it cooks.

Stir in the beans and spinach until the spinach wilts, then scrape the filling into a bowl and wipe the pan.

Lay a tortilla in the pan, cover half with cheese and filling, fold, and cook until crisp and golden on both sides.

Repeat with the second tortilla. Cut into wedges and serve with salsa.
The filling keeps 4 days. Assembled quesadillas are best eaten fresh.
