Method

Char the corn in a dry skillet over high heat until blistered in spots, about 5 minutes. Scoop it out.

Add the oil, the dry TVP, the taco seasoning and the broth to the pan. Simmer, stirring, until the TVP has soaked up the broth and starts to brown.

Whisk the yogurt, lime, chipotle and salt into a crema.

Divide the quinoa and black beans between 5 boxes. Top with the TVP, corn, pepper and tomatoes, then cilantro. Pack the crema on the side.
Keeps 5 days in the fridge. The mince, beans and quinoa freeze well; add the tomatoes and crema fresh.
- TVP soaks up the broth right in the pan, so there's no separate rehydrating step here.
