Potatoes go in first and get left alone long enough to actually crisp. Then come peppers, onion, seared sausage coins and a handful of kale. It's diner-counter comfort from one skillet, and it reheats better than it has any right to.

Method

Microwave the potato cubes in a covered bowl until just tender.

Heat the oil in a large skillet over medium-high. Add the potatoes in one layer and don't touch them until the bottoms are deep golden.

Flip, then add the pepper, onion, paprika, garlic powder and salt. Cook until the vegetables soften and char at the edges.

Push everything to the side, add the Smart Dogs and sear until blistered. Toss in the kale until it wilts.

Finish with green onion and serve straight from the skillet.
Keeps 4 days in the fridge. Re-crisp in a hot skillet, not the microwave.
- The microwave head start is the whole trick. Raw potatoes take 25 minutes in a pan.
