

Chocolate Peanut Butter Silk Pie
A press-in oat and walnut crust, a silky chocolate filling made from silken tofu, and a swirl of peanut butter on top. It takes 25 minutes of work and a few hours in the fridge, and it's the dessert people will remember from the whole meal.

Method

Heat the oven to 350°F. Blitz the oats and walnuts into coarse crumbs, then pulse in the maple, butter and salt.

Press firmly into a 9-inch pie dish and bake until fragrant and golden at the edges.

Melt the chocolate in 30-second bursts in the microwave, stirring between.

Blend the silken tofu, melted chocolate, cocoa, maple, vanilla and salt until completely silky.

Pour into the cooled crust. Dot with peanut butter and drag a knife through to swirl.

Chill until set, at least 4 hours or overnight.
Keeps 5 days covered in the fridge. Freezes in slices for a month.
- Nut allergy? Swap the walnuts for more oats and the peanut butter for sunflower seed butter.
