

Harissa Lentil and Roasted Veg Quinoa
Harissa does all the heavy lifting here. Lentils soak it up, the roasted peppers and zucchini get sweet and charred, and a garlicky yogurt sauce cools everything down. It tastes better on Thursday than it did on Sunday.

Heat the oven to 425°F. Toss the peppers, zucchini and onion with the oil and a big pinch of salt and roast until charred at the edges.

Warm the oil in a pan over medium, sizzle the garlic and harissa for 1 minute, then stir in the lentils and lemon until everything is coated and hot.

Stir the yogurt, lemon, garlic, parsley and salt together.

Divide the quinoa, harissa lentils and roasted veg between 4 boxes. Pack the yogurt sauce in small cups.
Keeps 5 days in the fridge. The lentils and quinoa freeze well for 2 months; freeze without the yogurt sauce.
- Harissa brands vary a lot in heat. Start with 2 tablespoons and taste before adding the third.
