Method
- 1
Dice the cucumber, halve the cherry tomatoes, chop the cilantro and slice the avocado.
- 2
Whisk the lime juice, vegan mayo, gochujang and olive oil together. Add water a little at a time until it drizzles easily. Heat in a pan if you prefer.
- 3
Crumble the super-firm tofu into a hot nonstick pan and cook, stirring, until heated through and lightly golden.
- 4
Stir in the turmeric and liquid aminos, then season with salt and pepper. Cook 2 more minutes.
- 5
Warm the tacos in a dry pan or the microwave until soft and pliable.
- 6
Spread hummus on each taco, then add the super-firm tofu.
- 7
Top with kimchi, cucumber, tomatoes, avocado and cilantro.
- 8
Drizzle with the gochujang sauce and serve right away.
Keep the tofu, sauce and toppings in separate containers in the fridge for up to 3 days. Assemble fresh.
- Add the water to the sauce a little at a time so it does not get too thin.
- Warm the tortillas just before filling so they do not crack.
